Abstract:
The invention relates to a non-thermal ultraviolet treatment of milk and can be used for the food industry. The aim of said invention is to simplify the milk processing by obtaining a maximum processing depth of a treatable layer and to improve the milk quality. The inventive method consists in irradiating milk in a thin hermetic and thickness-controlled layer within a wavelength range of 165-185 nanometers, wherein the layer thickness is equal to or less than the optical thickness of said wavelength range and is defined according to a Bouger-Lambert law.
