Abstract:
Provided is a microorganism capable of digesting caffeine. Also provided are a caffeine digesting agent, a food or beverage having a reduced caffeine content, a method for manufacturing the food or beverage, and a method for digesting caffeine. A microorganism that is capable of digesting caffeine and belongs to the genus Penicillium, Colletotrichum, Pestalotia, Pestalotiopsis, Gelasinospora or Aspergillus (provided that the following strains are excluded: Penicillium citrinum MTCC5215, Penicillium manginii CBS253.31, Aspergillus niger NCBT110A, Aspergillus sydowii NRRL250, Aspergillus pallidofulvus, NRRL4789, Aspergillus sesamicola CBS137324, Aspergillus ustus NRRL275, Aspergillus tamarii NRRL20818, Aspergillus niger van Thiegem, Aspergillus niger AnTD, Aspergillus niger LPBx and Aspergillus niger AN-5).
