Abstract:
The present invention belongs to the field of food processing, and discloses a neutral exopolysaccharide of lactobacillus plantarum and the use thereof. The neutral exopolysaccharide of lactobacillus plantarum of the present invention is extracted from fermentation broth of lactobacillus sp. DMDL 9010 for the first time, and has a novel structure, uniform components, a molecular weight of 55637 Da, and a molar ratio of monosaccharide components galactose : glucose : mannose = 5.35 : 86.25 : 8.40. The purity of the neutral exopolysaccharide extracted in the present invention is as high as 99.68%. By using a scanning electron microscope (SEM) and by means of thermal analysis, it is found that the polysaccharide shows a smooth surface and a rod-like morphology, and has certain thermal stability and potential food application values. Animal experiments prove that the neutral exopolysaccharide has a good antidepressant effect.
