Abstract:

Provided is a Lactobacillus plantarum stain DSM32493 which bears a mutation in the ATP synthase alpha subunit gene of the ATP-synthase operon. The mutation is G to A at position 506 of the ATP synthase alpha subunit gene. A method for manufacturing fermented product using the Lactobacillus plantarum stain DSM32493 is provided too.
