Abstract:
Provided are: a compound which has a spicy aroma useful as an aroma chemical, particularly a cumin-like aroma, is stable in an aqueous medium, can emphasize various aromas including a spicy aroma, a green aroma, a floral aroma, a woody aroma and a citrus-like aroma when mixed with another aroma chemical, and is reduced in an undesirable oily, chemical or metallic odor; and an aroma composition containing the compound. A nitrile compound represented by formula (I-3), formula (I-2) or formula (I-1).
