Abstract:
Provided is a non-tempered-type hard butter composition which suppresses the occurrence of a bloom phenomenon over time and provides an oily confectionery that melts well in the mouth. The non-tempered-type hard butter composition satisfies the following conditions (1)-(3). Condition (1): SFC at 25 °C is 27-67%. Condition (2): the content of trisaturated triglyceride in constituent triglycerides is 20-65 mass%. Condition (3): the content of a mixed acid-type trisaturated triglyceride (LaSS) containing a lauric acid (La) residue in the trisaturated triglyceride is 51-65 mass%, where S indicates a saturated fatty acid residue having at least 16 carbon atoms.
