Abstract:
This novel foaming oil-in-water emulsion for kneading contains: 0.45 wt% or less of propylene glycol fatty acid ester; 0.45 wt% or less of polyglycerin fatty acid ester; 0.9-31 wt% of edible oil and fat; 22-39 wt% of water; 2.5-12 wt% of saturated fatty acid monoglyceride; 2-7 wt% of a glyceride derivative in which an organic acid is ester-bonded to monoglyceride; 3.0-5.0 wt% of sucrose saturated fatty acid ester having an HLB value of 9-16; 24-46 wt% of glucide (in terms of solid content); and 0.04-0.5 wt% of polysaccharide thickener. The weight ratio of the total content of the glyceride derivative and the sucrose saturated fatty acid ester to the content of the saturated fatty acid monoglyceride is 0.7-3.0, the weight ratio of the content of the glyceride derivative to the content of the sucrose saturated fatty acid ester is 0.5-1.6, and the content of behenic acid monoglyceride in the total amount of the saturated fatty acid monoglyceride is 7-100 wt%.
