Abstract:
The present invention provides an oil or fat composition for confectionery that shows excellent bloom resistance over a prolonged storage time even if the CB content thereof is increased to a level enough to give a noticeable good cacao flavor. According to the first embodiment, the oil or fat composition for confectionery contains the following oil or fat (A) and satisfies the following requirements (1) and (2). Oil or fat (A): a random-transesterified oil or fat obtained from oil or fat (A-1) having a lauric acid (La) content of 35-60 mass% relative to the total constituting fatty acids with oil or fat (A-2) having a palmitic acid (P) content of 35 mass% or more relative to the total constituting fatty acids. (1) In an oil phase, the content of oil or fat (A) is 80 mass% or more, and (2) the La content is 20 mass% or more relative to the total constituting fatty acids. According to the second embodiment, the oil or fat composition for confectionery satisfies the following requirements (1) to (3). (1) The SSS triglyceride content is 40 mass% or more relative to the total constituting triglycerides, (2) the SaSbSc triglyceride content is 5 mass% or more relative to the SSS triglycerides, and (3) the ratio of the solid fat content at 25°C (SFC-25) (%) to the solid fat content at 35°C (SFC-35) (%) [SFC-25/SFC-35] is 4.3 to 7.5, wherein: S represents a saturated fatty acid; Sa represents lauric acid (La) or myristic acid (M); Sb and Sc represent a saturated fatty acid having 16 or more carbon atoms; and the sum of the carbon atoms in Sa, Sb and Sc is 46.
