A process for producing an ammonium salt of &agr -hydroxy acid by means of multistage reaction vessels, comprising hydrolyzing an &agr -hydroxy nitrile compound of the formula: RCH(OH)CN in an aqueous solvent with the use of a biocatalyst to thereby attain conversion to an ammonium salt of &agr -hydroxy acid of the formula: RCH(OH)COO^-NH₄⁺, wherein the reaction solution of each of the reaction vessels is sequentially transferred to the subsequent-stage reaction vessel and wherein the &agr -hydroxy nitrile compound is charged in the reaction vessel having the reaction solution transferred thereto so that the cumulative concentration of ammonium salt of &agr -hydroxy acid is sequentially stagewise increased through the multistage reaction vessels. Thus, there is provided an industrially advantageous process for obtaining a high-concentration aqueous solution of ammonium salt of &agr -hydroxy acid, in which the impact of the drop of reaction rate by a rise of product concentration is reduced and in which the amount of expensive biocatalyst used can be minimized.
