Abstract:
This phenolic compound production method is a method for producing a compound represented by formula (2) from a compound represented by formula (1), and comprises a step for bringing an enzyme into contact with the compound represented by formula (1), wherein the enzyme has an activity of cleaving the carbon-carbon double bond of the compound represented by formula (1) (excluding the case where the compound represented by formula (1) is ferulic acid and the enzyme is a protein having the amino acid sequence represented by SEQ ID NO: 1). In the formula, R1 represents a hydrogen atom or an alkyl group, R2 each independently represents an alkoxy group, a hydroxy group, an alkyl group or a halogen atom, and n is a number of 0-4.
