Abstract:
A poultry processing device according to one embodiment of the present invention comprises: a scraper part for separating, from scapula, flesh surrounding the scapula of a poultry carcass held by a holding jig; and an incising blade that includes a cutting edge that extends, toward the direction of separating from the holding jig, along the upstream side of the advancement direction in which the scraper part advances towards the holding jig when the scraper part separates flesh from the scapula, the incising blade being for incising, with the cutting edge, skin which is between scapulae and part of the flesh that runs up onto the scraper part.
