Abstract:
Disclosed are a probiotic gel particle, a preparation method thereof and a dairy product containing same, wherein the probiotic gel particle comprises: an oil layer, the oil layer being formed by edible fat and an edible antioxidant, and the oil layer limiting a closed accommodation space; a kernel body, the kernel body comprising probiotic and culture mediums, and the kernel body being encapsulated in the accommodation space; and a glue layer, the glue layer being formed on the external surface of the oil layer and coating the oil layer.
