Abstract:
A process for producing a soybean protein material which comprises hydrolyzing soybean protein in an aqueous system by using a protease to give a degree of hydrolysis of 5 to 20, and, if required, emulsifying 5 to 50 parts by weight of a fat per 100 parts by weight of the soybean protein before or after the hydrolysis step followed by drying, wherein an emulsifier is dispersed preferably in any step after the emulsification of the fat. The obtained soybean protein material is suitable for a pickle of a high concentration or thick drinks (soup, etc.) in flavor, color tone and dispersibility in water and scarcely foams up.
