Abstract:
A process for producing a cellooligosaccharide which comprises enzymatically decomposing in the presence of a cellulase a water-insoluble natural cellulosic substance which has an average degree of polymerization of 700 or lower and an average particle diameter of 100 µm or smaller and in which the content of components soluble in diethyl ether is less than 1 mass%. Also provided is a process for cellooligosaccharide production which comprises enzymatically decomposing in the presence of a cellulase a water-insoluble natural cellulosic substance which has an average degree of polymerization of 700 or lower and in which the content of colloidal cellulose components is 10 mass% or higher and the content of components soluble in diethyl ether is less than 1 mass%.
