Abstract:
By conveniently preparing a mixture in which a liquid is homogeneously dispersed
and a mixed kneaded matter having a high viscoelasticity within a shot time, it
is possible to produce a mix kneaded product which is excellent in flavor and texture,
suffers from no overmixing due to an excessively large shear force even in the
case of a weak dough, and has a high viscoelasticity. A mix kneading material (10)
is fed into a container (11) of a mix kneader (2). A rotor (15) of a mixing/mix-kneading
member (12) located in the lower part of the container (11) is rotated. Thus, the
mix kneading material (10) is rotated with agitation bars (16), which project
upward from the upper periphery of the rotor (15) toward the inner wall of the container,
in the space between the agitation bars and the inner wall of the container (11)
and transported to the upper part, thereby forming small dumplings (60) of the
mixture. The small dumplings of the mixture located below the rotor (15) are lifted
above a lifting member (17). At the same time or before or after the above procedure,
additional small dumplings (60) of the mixture are adhered to the outer periphery
of the mix kneaded matter (20) in a space (22) to thicken the mix kneaded matter
(20). Then, a stress is applied to the outer periphery of the mix kneaded matter
(20) by the inner periphery of the agitation bars (16) within the space (22) surrounded
by the center in the upper part of the rotor and an intermediate lid (27) to thereby
give the mix kneaded matter (20) having a high viscosity.
