Abstract:
The protein concentrate of orange seed was hydrolyzed using the digestive enzyme alcalase at a temperature of 50 C° and a pH of 8 for 3.5 hours in sugar-coated incubators, and after a specified period of time, the enzyme used at a temperature of 90 Cº was deactivated for 5 minutes, and then the supernatant resulting from centrifugation (12000 rpm for 15 minutes) were kept at -20 Cº after freeze drying by dryer and finally after separating and purifying the peptides using chromatography method, the resulting peptides were examined in terms of their antihypertensive health properties. In order to influence the body's digestive conditions on the health properties, gastric and intestinal digestion simulation conditions were used in the extracorporeal environment. The health-giving peptides also include: Reducing the activity of ACE enzyme and then preventing high blood pressure as well as cardiovascular diseases. Beneficial peptides with antihypertensive potential.
