Abstract:
The present invention addresses the problem of providing a method for more easily and highly efficiently industrially producing high-purity L-cyclic amino acids from cyclic amino acids that have a double bond at the 1 position. According to the present invention, an L-cyclic amino acid is produced by making a specific enzyme act on a cyclic amino acid that has a double bond at the 1 position, the specific enzyme having catalytic performance that reduces cyclic amino acids that have a double bond at the 1 position to generate L-cyclic amino acids.
