Abstract:
Provided is a technology for lessening sugars in vegetable beverage and food. This technology provides: a method that is for producing vegetable beverage and food and that comprises a step for causing a maltotriose-generating enzyme to act on a raw vegetable material; and a method for lessening sugars in vegetable beverages and foods. In the production method according to the present technology, a step for causing a carbohydrate-oxidizing enzyme to act on the raw vegetable material can be further performed. The present technology also provides an enzymatic agent that is for lessening sugars and that contains a maltotriose-generating enzyme. The enzymatic agent for lessening sugars according to the present technology can further contain a carbohydrate-oxidizing enzyme.
