Abstract:
Provided are a protein hydrolysate, a polypeptide solution and a polypeptide, and a preparation method and use thereof. The method comprises steps of: adding extraction agent to brewer's spent grain and obtaining a crude protein or a crude protein solution; preparing a crude protein solution from the crude protein, adjusting pH of the crude protein solution to 6.5-8.5; adding an alkaline protease and heating to 45-65℃ to hydrolyze for 1-5 h, obtaining a protein hydrolysate; inactivating the protease in the protein hydrolysate, obtaining a polypeptide solution; separating the polypeptide solution by gel column, collecting peaks and pooling together, and obtaining an active polypeptide. The polypeptide has a hypoglycemic activity.
