Abstract:
Provided is a puffed food composition that contains beans, that has an airly texture, that tends not to stick to the teeth, and that has advanced freedom of shapability. The puffed food composition contains beans and/or millet and satisfies all of the requirements (1) to (7). (1) Containing 3 mass% or more, on a dry mass basis, of dietary fibers. (2) Containing 5 mass% or more, on a dry mass basis, of starch. (3) Containing 4 mass% or more, on a dry mass basis, of a protein. (4) Containing 2 mass% or more, on a dry mass basis, of soluble carbohydrate in a state of being contained in one or more edible plants selected from beans, millet, potatoes, seeds, vegetables and fruits. (5) Containing 10 mass% or more, on a dry mass basis, of edible parts of beans and/or millet and dietary fiber localized portion of edible plants, with respect to the entire puffed food composition. (6) In the case where an ultrasonic treatment has been performed on 2 mass% water dispersion liquid of the puffed food composition using a laser diffraction particle size distribution measurement instrument, where distilled water serves as the measurement solvent, the quantity-based average diameter of the puffed food composition in the dispersion liquid is 30 μm or less. (7) In the case where an ultrasonic treatment has not been performed on 2 mass% water dispersion liquid of the puffed food composition using a laser diffraction particle size distribution measurement instrument, where distilled water serves as the measurement solvent, the maximum particle diameter of the puffed food composition in the dispersion liquid is 300 μm or more.
