Abstract:
[Problem] To provide a red colorant obtained from both an iridoid compound and a protein hydrolyzate, the red colorant being capable of stably retaining the color even in acidic liquids and having better light resistance, and a process for producing the red colorant. [Solution] A process for producing a red colorant which comprises reacting an iridoid compound that has a carboxyl group at the 4-position of the iridoid framework with a protein hydrolyzate, characterized in that as the protein hydrolyzate, use is made of a hydrolyzate in which the total proportion of alanine, glycine, and proline in the composition of all amino acids contained in the hydrolyzate is 30 wt% or more.
