Abstract:
Provided are a rice dough composition and rice dough prepared therefrom. The rice dough composition comprises rice flour, cellulose ether, gums and an emulsion. Using the abovementioned rice dough composition, rice dough which gluten-sensitive people may eat and which has a texture different from that of dough made of wheat flour can be obtained. The moisture of the abovementioned rice dough can be kept from being evaporated when in cold storage and heated during the re-baking, and the change in the texture of the abovementioned rice dough caused by hardening is reduced.
