Abstract:
A rice-quality-improving agent used during cooking of molded rice obtained by molding cooked rice, wherein: the rice-quality-improving agent is a pelletized article of a raw ingredient having a starch content of 70 mass% or greater; the raw ingredient includes a component (A) that is an acid-treated or oxidation-treated starch having an amylose content of 20% or less, a component (B) that is a pregelatinized starch, and a component (C) that is a starch having an amylose content of 20% or less that has not been acid-treated or oxidation-treated; the amount of a fraction in the rice-quality-improving agent that does not pass through a 0.5-mm-mesh sieve is 5-100 mass% (inclusive) relative to the entirety of the rice-quality-improving agent; and the mass ratio ((A)/(C)) of the component (A) content to the component (C) content in the raw ingredient is 0.15-2.4 (inclusive).
