Abstract:
The present invention addresses the problem of developing a technique for producing a tea extract whereof the flavor does not deteriorate readily, even with the passage of time. This tea extract production method comprises: (a) the step of subjecting a roasted green tea slurry to water vapor extraction by the gas-liquid countercurrent contact extraction method, to recover a roasted green tea aroma as a distillate; (b) the step of bringing the water vapor extraction residue from step a into contact with activated carbon, to obtain an activated-carbon-treated extract; and (c) the step of mixing the roasted green tea aroma from step a with the activated-carbon-treated extract from step b, to obtain a roasted tea extract.
