Abstract:
The present invention addresses the problem of providing a roll-in oil-and-fat composition having excellent floating for a Danish pastry or the like while having a smooth physical property that is suitable for folding. The present invention also addresses the problem facilitating blending of the roll-in oil-and-fat composition. Provided is a roll-in oil-and-fat composition in which 5-26 mass% of a prescribed transesterified oil-and-fat is blended into an oil phase. It was discovered that excellent folding suitability is exhibited and floating for a Danish pastry or the like is improved by setting the content of palmitic acid and stearic acid in the transesterified oil-and-fat to a prescribed range and setting the solid fat content (SFC) in oils and fats other than the transesterified oil-and-fat to a prescribed range, thereby achieving the present invention.
