Abstract:
A running type frying apparatus, according to an embodiment of the present invention, comprises: a frying vessel that has an upper section and a lower section that are formed to be distinguished from each other and a narrow intermediate section that is formed between the upper section filled with oil and the lower section filled with water, wherein an oil drain port is installed on one side of the intermediate section, and a water drain port is installed on the lower side of the lower section; a frame that supports four sides of the frying vessel; a heater installed in zigzags in the upper section of the frying vessel; an air-cooling means that cools the oil in the frying vessel, wherein a plurality of air-cooling pipes are installed in the intermediate section of the frying vessel; a temperature control means that is installed to control the heater and the air-cooling means according to the set temperature of the oil in the upper section of the frying apparatus, wherein an oil temperature sensor is installed on one side of the upper section of the frying vessel, a water temperature sensor is installed in the lower section of the frying vessel, and a heater temperature sensor is installed to be close to the heater; a distributing box that is installed on the rear side of the frying vessel and has through-holes formed through the lateral side and the upper side thereof, wherein cables enter and exit the distributing box through the through-holes; and a transparent window that is installed on the lower side of the front of the frying vessel and on which a proper boundary line between the water and the oil is marked.
