Abstract:
Provided is a saccharomyces cerevisiae strain for producing a breast milk lipid substitute. By means of integrating a heterologous lysophosphatidic acid acyltransferase into saccharomyces cerevisiae and knocking out a self-natural lysophosphatidic acid acyltransferase, the content of palmitic acid (C16:0) at position Sn-2 in triglyceride produced by the saccharomyces cerevisiae is increased, and the breast milk fat substitute is synthesized; and on this basis, by means of knocking out a metabolic pathway-related gene, the content of the breast milk lipid substitute in the product is further increased. The saccharomyces cerevisiae is used for synthesizing the breast milk lipid substitute from scratch, such that the content of total fatty acids reaches 15% or more, and the relative content of C16:0 at position Sn-2 reaches about 60%.
