Abstract:
The present invention belongs to the technical field of phospholipid processing, and in particular relates to a self-aggregating aqueous phospholipid and a preparation method therefor. The self-aggregating aqueous phospholipid has main components of a phospholipid, an oil and water, a water content of 70-80 g/100 g, an acetone insoluble content of 92.5-95.5 g/100 g on a dry basis, and a sensory index of brown translucent fluid. The present invention solves the defects that the existing aqueous phospholipids have a low acetone insoluble content and the industry has long-term dependence on solvent methods for preparing powdered phospholipids, and also solves the technical problem that powdered phospholipids in a hydration method cannot be industrialized. The use of the self-aggregating aqueous phospholipid of the present invention is to prepare a powdered phospholipid by means of a hydration method. The acetone insoluble content is as high as 92.5-95.5g/100g, the color is natural yellow, has no bleaching, is free of a solvent, and can replace powdered phospholipids in a solvent method, avoiding environmental pollution and food safety hazards caused by powdered phospholipids in a solvent method. In addition, the production costs of the powdered phospholipid in a hydration method are much lower than those in a solvent method.
