Abstract:
[Problem] The present invention addresses the problem of providing: a sensor material capable of simply detecting a compound having two or more hydroxyl groups per molecule, the compound being a taste component contained in wine, etc.; and a method for evaluating the taste of wine using the sensor material. [Solution] A sensor material for detecting a compound having two or more hydroxyl groups per molecular as a fluorescent response, wherein the sensor material includes a π-conjugated polymer that has a fluorescence emission site in the main chain and a recognition site capable of bonding with the taste component in a side chain, and the recognition site is boronic acid or a boronic acid ester.
