Abstract:
A soaking-type green plum wine and a production method with high-voltage pulse electric field-combined ultrasonic-assisted soaking. According to the method, fresh green plum fruit is selected and left to be mature, and a green plum yellow pulp is separated from a kernel. After the green plum kernel is debittered, 85-95% vol edible alcohol is added, and the system is subjected to pretreatment soaking with mass transfer promoted under electroporation by a high-voltage pulse electric field and ultrasonic treatment to obtain a green plum kernel alcohol soaking solution. 30-40% vol edible alcohol is added into the green plum yellow pulp, the system is subjected to pretreatment with mass transfer promoted under electroporation by a high-voltage pulse electric field and ultrasonic treatment, and then white granulated sugar is added for soaking, thus obtaining a green plum yellow pulp alcohol soaking solution. The green plum kernel alcohol soaking solution and the green plum yellow pulp alcohol soaking solution are mixed to obtain a soaking-type green plum wine.
