Abstract:
[Problem] To provide a novel composition which contains an alginic acid salt, e.g., ammonium alginate, as an active ingredient. [Solution] An alginic acid salt-containing microcapsule for foods, which contains an alginic acid salt (excluding a sodium salt) as an active ingredient and has the alginic acid salt encapsulated therein. A microcapsule having an alginic acid salt encapsulated therein is provided. Therefore, when the microcapsule is attached or added to a food upon use, the direct contact of the alginic acid salt with the tongue can be avoided. As a result, the food can be ingested without sensing a smell or flavor characteristic of the alginic acid salt, particularly ammonium alginate. It also becomes possible to prevent the direct adsorption of a salty component onto the alginic acid salt in the food. As a result, the food can be ingested without losing the salty taste thereof. Furthermore, the microcapsule is degraded in the digested tract to allow the alginic acid salt to exert the sodium adsorption ability thereof. As a result, the excretion of sodium can be promoted.
