Abstract:
A starch-based dietary fiber having high yield of butyric acid and a processing method therefor. The starch-based dietary fiber having high yield of butyric acid is prepared by using starch as a raw material and reconstructing a key joint mode of a starch chain in coordination with a catalysis-membrane filtration hierarchical coupling technology and a complex enzyme consisting of α-amylase and glycosyltransferase. The synthesized starch-based dietary fiber not only has high solubility and low viscosity, but also can be easily fermented by intestinal microorganisms to achieve high yield of butyric acid, so as to achieve higher nutritional quality. The application of the obtained product may relate to the fields such as functional foods and medicines.
