Abstract:
A process for producing novel starch having different starch properties using an enzyme system obtained by genetically modifying an enzyme system synthesizing plant starch&semi a method wherein a gene encoding a branching enzyme of a starch−producing organism is transferred into a variant lacking this enzyme so as to overexpress the enzyme compared with the original wild type&semi a method of constructing a variant showing a different expression dose of the enzyme from the original wild type&semi the thus obtained variant showing a different expression dose of the branching enzyme from the original wild type&semi and a method of producing starch while controlling the expression of isoamylase during the starch production as in rice, which comprises transferring a gene having rice isoamylase promoter and a promoter located in the upstream of isomaylase gene into a plant.
