Abstract:
This system for processing bone-in leg meat is equipped with: a right leg slit-forming unit (12) for forming a slit in a piece of right leg bone-in meat; a left leg slit-forming unit (14) for forming a slit in a piece of left leg bone-in meat; a processing line (16) provided with a plurality of processing stations for separating the bone portion and the meat portion of pieces of bone-in meat in which slits have been formed by the right leg slit-forming unit and the left leg slit-forming unit; and a loading unit (1st) provided furthest upstream on the processing line and for receiving pieces of right leg bone-in meat in which a slit has been formed by the right leg slit-forming unit and pieces of left leg bone-in meat in which a slit has been formed by the left leg slit-forming unit.
