Abstract:
Tank for the maturation and storage of soft cheese types in brine which has the possibility to close in a hermetic and air-tight way and be stacked one on top of the other. The tank for the maturation and storage of soft cheese types in brine on the upper part has an appropriate silicon cord sealing the lid in a hermetic and air-tight way with the help of special closing latches- clamps. Moreover it has a framework of hollow girders allowing the stacking by height without touching the lid of the tank below, so the hermetic sealing of the tank below is not affected.

CLAIMS

1. The tank for the maturation and storage of soft cheese types in brine is characterized by a. the fact that it has a silicon cord for the seal of its lid b. is characterized by the existence of a framework of hollow girders allowing their stacking by height and c. is

characterized by the existence at the centre of the lid of a plug of hygienic type for the filling of the tank with brine up to the rim of the plug, having as a result the full exit of air from the tank (air-tight sealing).

2. Use of the tank, as mentioned in claim 1, for the maturation and storage of soft cheese types in brine.

3. The tank for the maturation and storage of soft cheese types in brine, as mentioned in claim 1, is characterized by the existence of two (2) stainless hollow girders welded to the upper part of the tank longitudinally, four (4) stainless hollow girders welded by its height, two (2) stainless hollow girders welded to the base of the four (4) by- height stainless hollow girders.

4. The tank for the maturation and storage of soft cheese types in brine as mentioned in claim 1 is characterized by the existence of a silicon cord which bears a slot adjusting to the rim of the upper part of the tank and on which a silicon cord adjusts the tank lid, creating a contact point on the surfaces of the lid and tank body, securing the seal.

5. The tank for the maturation and storage of soft cheese types in brine as mentioned in claim 1 is characterized by the existence at the centre of lid of a plug of hygienic type for the filling of the tank with brine removing the air from the whole body of the tank.

DESCRIPTION

TANK FOR THE MATURATION AND STORAGE OF SOFT CHEESE TYPES IN BRINE

The invention has to do with a tank for the maturation and storage of soft cheese types in brine, totally made of stainless steel, of a rectangular form, adjusted to a framework of stainless hollow girders.

There are tanks of this type, for the specific use, with respective dimensions. Some of these do not even have a sealing lid, having as a result the exposure of the product to air and some of these have a simple lid which does not offer an air-tight seal, having as a result the exposure of the product to air. Moreover, during their traffic to the production and storage sites there is a partial discharge of brine. The aforementioned tanks have the following disadvantages. Due to the non-hermetic sealing, air comes in that favours the development of fungi and ferments having as a result the spoilage of the product in a short period of time (15 to 30 days). Moreover, their washing takes place manually with doubtful results. An advantage of the new tank is its air-tight and hermetic sealing, having as a result, due to the optimal storage conditions (non-existence of air within the tank), the fact that the life of the product within the tank is increased from ten (10) to fifteen (15) months, a period covering the whole life of the product.

During the traffic of the full tanks we do not have any loss of brine. During their storage, they can be stacked by height (up to 5 tanks) without their tightness being affected.

And finally the washing of the tanks can take place either manually or automatically with the chemical cleaning system of the factory (CIP, Clean in place). Figures 1 and 2 are the perspective view of the tank.

Figure 3 shows the plan view of the tank.

Figures 4 and 5 show the side views of the tank. According to this invention the tank on the upper part of its body circumferentially has a specially formed rim on which a silicon cord of special section fits on which the lid steps. With the help of six closing latches- clamps placed on the body of the tank the clamping of the lid takes place, having as a result the full seal of the tank. The lid has a special plug of a hygienic type at its centre for the filling of the tank with brine up to the rim of the plug having as a result the full exit of air from the tank (air-tight sealing).

Moreover, the tank is supported by a framework of stainless hollow girders, formed by:

two (2) stainless hollow girders welded on the upper part of the tank longitudinally, four (4) stainless hollow girders welded by its height, two (2) stainless hollow girders welded on the base of the four (4) by-height stainless hollow girders. The aforementioned framework of hollow girders is appropriately adjusted (welded) to the body of the tank so that it allows the stacking and storage of the tanks that are full of product and brine by height, without the tank on top stepping on the sealing lid of the tank below, so it does not cause wear to the silicon cord and does not affect the tightness of the tank.
