Abstract:
In the course of string extraction the toughest parts of connectives are extracted from the meat. All the other parts including skins, structures collecting muscular cells into bundles and larger vessels are caught by the separator of the cutting unit of the meat grinder. At the same time pumping pressure is exerted on the meat which is being ground. The connective extracted from the meat is processed in the cutting unit of the meat grinder for the second time, mixed with salt, kept in a refrigerator, ground again and used for making sausage. The upper part of the funnel placed outside the case of the meat grinder is rotatable. The bed of the funnel has spiral grooves. The sleeve encompassing the pressure section of the blade of the shaft is removable and equipped with an annular knife. The cutting unit of the meat grinder is equipped with distance rings fixing the plates and the distance sleeves pressing the knives against the plates. The separator of the meat which is being ground equipped with two outlet pipes includes a cutting and separating plate and one-sided knife with blades having cuts placed in the straight-line channel. The geometrical form of the base of the knife blade depends on the configuration of the plate face abrased by it and the nature of the abrasion of the material of the knife blade forecasted on the basis of experimental data.
