Abstract:
Flour from oil cake of cold pressed oil from the seed of Styrian oil pumpkin is a product of powder composition, greenish colour and pleasant aroma with smell to pumpkin seed. Product obtained from oil-cake () which is a residue upon the process of cold pressed oil production from the seed of Styrian oil pumpkin in a particularly adjusted procedure of mill processing under millstone () with parameters of process defined so that fine granulation content is obtained, and to avoid initiation of undesired processes that could influence to change of nutritive or sensory properties of source material, as well. Flour from oil cake of cold pressed oil from the seed of Styrian oil pumpkin is intended as an additive to bakery products in 20%, whereby achieved are rheological properties with additional product that enable continual course of process of baking production, increased yield in bakery products and more supple features of dough during kneading, and it also provides pleasant aroma, adequate volume and sensory properties attractive to consumers.
