Abstract:
A preparation method for a three-dimensional freeze-dried coffee block product, comprising: extracting roasted coffee beans to obtain a coffee liquid; and freeze-drying the coffee liquid to form a coffee block product having a three-dimensional shape, wherein the freeze-drying comprises pre-freezing treatment and freeze-drying treatment after the pre-freezing treatment; conditions for the pre-freezing treatment are that: the temperature is reduced to about -20°C or less at the cooling rate of about 0.5°C/min to 2°C/min; and conditions for the freeze-drying treatment are that: the vacuum degree of sublimation drying is about 15 Pa or less, the temperature of sublimation drying is about -15°C to 15°C, and the duration of sublimation drying is about 25 h to 50 h; the vacuum degree of re-drying is about 5 Pa or less, the temperature of re-drying is about 15°C to 30°C, and the duration of re-drying is about 8 h to 15 h. The present application further relates to a coffee block product prepared by the method, a brewing method for the product, and a coffee-flavored product prepared from the product. The method can remarkably improve the color, flavor, and dissolution rate the coffee block product, and reduce the oxidative deterioration rate thereof.
