Abstract:
A vanilla bean production method comprising a sterilization step for sterilizing vanilla fruit, an incubation step for storing the sterilized vanilla fruit in an incubated state, a fermentation step for fermenting the incubated vanilla fruit, a drying step for drying the fermented vanilla fruit, and a fixation step for storing the dried vanilla fruit in an enclosed space, said vanilla bean production method being characterized that in the fixation step, the vanilla fruit are stored in an atmosphere containing an aromatic wood or an essential oil derived from an aromatic wood.
