Abstract:
[Problem] To produce a water-soluble pea polysaccharide which exhibits a protein dispersion stabilizing ability in a wide pH range by a simple method.
[Solution] A water-soluble pea polysaccharide which has a methyl esterification degree of 50% or more and of which a 3 wt% aqueous solution has a hue a* value of 0 to 3.5 inclusive can be produced by a simple method in which pea fibers are used as a raw material and the pea fibers are washed and then extracted. The water-soluble pea polysaccharide has a superior protein dispersion stabilizing ability compared with conventional water-soluble pea polysaccharides.
