Abstract:
The present invention relates to water-soluble sterol derivatives for lowering a cholesterol level and to a method for preparing same. The method for preparing water-soluble sterol derivatives according to the present invention enables phytosterol intermediates and ethylene oxide to react in the presence of an alkali metal or alcoholate thereof under a solvent-free condition. The method of the present invention prepares water-soluble sterol derivatives for lowering a cholesterol level, which are soluble in water to a maximum of 3.5 wt % based on a sterol at a temperature of 4°C, and which are safer for human body and thus can be valuably used as materials for water-soluble foods or medicine.
