Abstract:
The present invention provides a single-phase composition derived from a whey protein concentrate and relates to a whey-derived polar lipids-concentrated fraction composition, which is derived from a fraction obtained by treating the whey protein concentrate with an alcohol containing water, and in which the content of total lipids is at least 90% by weight on the basis of the weight of a dry matter of the composition, and the content of phospholipids is at least 35% by weight on the basis of the weight of the total lipids. According to the present invention, it is possible to prepare a whey-derived polar lipid concentrated fraction composition in a stable form that maximizes emulsification and physiological functionality.
