Abstract:
A whitening prevention method according to the present invention comprises: coating the whole circumference or at least cut plane, etc. of small nut pieces with one or more coating agents selected from among a molten hardened oil, a liquid emulsifier and a mixture of such a hardened oil with such an emulsifier; cooling the coated small nut pieces to thereby harden the coating(s); and thus forming a coating film on the whole circumference or at least cut plane of the small nut pieces. Whitening-free nuts according to the present invention comprise small nut pieces wherein the whole circumference or at least cut plane or crushed plane is coated with a film formed of one or more coating agents selected from among a hardened oil, an emulsifier and a mixture of a hardened oil with an emulsifier. A confectionery with nuts according to the present invention comprises a confectionery to which the whitening-free nuts are stuck in a state of being exposed to the outside.
