Abstract:
PROBLEM TO BE SOLVED: To provide a hemp protein product, which may be an isolate, and forms solution at low pH value, and is useful for enriching soft drinks and sports drinks without precipitating protein.SOLUTION: The hemp protein product can be obtained by: extracting a hemp protein source material with an aqueous calcium salt solution to form a hemp protein aqueous solution; separating the hemp protein aqueous solution from the residual hemp protein source; and adjusting the pH of the hemp protein aqueous solution to a pH of about 1.5 to about 4.4 to form an acidified hemp protein solution, and after an optional concentration and diafiltration and in order to form a hemp protein product, subjecting to drying.SELECTED DRAWING: None
