Abstract:
To provide an acidic transparent gel-like food containing hyaluronic acid and/or its salt, and maintaining transparent gel-like physical properties even after being heated.
The acidic transparent gel-like food contains 0.005-0.5% of the hyaluronic acid and/or the salt thereof, wherein the Brix of the product is 20-40, deacylated gellan gum, soluble calcium salt and 6-30% of starch syrup (in terms of solid content) are added, and ≥60 pts.mass of starch syrup (in terms of solid content) is added on the basis of 1 pts.mass of the hyaluronic acid and/or the salt thereof.
