Abstract:

PURPOSE: To bind and mold a minute food without heating, by using powdery protein paste prepared from animal myofibrils from which inhibiting factors of gel formation are removed, which is not washed with water.

CONSTITUTION: Animal meat, fish meat, or muscles of a mollusk, crustacean, etc. are selected, washed with water at not higher than 15°C to remove inhibiting factors of gel formation completely, and frozen at a temperature not higher than -18°C without washing them with water. The frozen matter is subjected to granulation and drying while being frozen to give powdery protein paste. Minute food flake or pieces are blended with 0.2W10wt% powdery protein paste and 0.005W 4wt% salt, molded, and allowed to stand at 5°C, normal temperature, or about at 50°C, or heated at not lower than 60°C for a proper time.
