Abstract:

PROBLEM TO BE SOLVED: To obtain compressed bread recoverable bulkiness by heating in a microwave oven, having excellent flavor and texture, and useful for a food service industry, etc., by fermenting a specific bread composition and baking the fermented bread to reduce its bulkiness.
SOLUTION: This compressed bread has a reduced bulkiness after the baking and is obtained by fermenting a bread composition incorporated with oil and fat and/or an oil and fat composition so that the oil and fat for a chocolate, etc., are 2-150 pts.wt. to 100 pts.wt. of wheat flour in a normal method and having 40-80 SFI (Solid Fat Index) at 15°C and 15-50 SFI at 30°C, and baking the resultant composition in a normal method.
