Abstract:

To obtain the subject product having boiling stability and extremely good pulpy texture by roller-drying an external starch-containing fruit- and vegetable-concentrates to provide flakes, agglomerating the obtained flakes, and subjecting the agglomerated flakes to a heat humidification treatment.

External starch-containing fruit- and vegetable-concentrates are roller-dried and the dried product is crushed to provide flakes. The obtained flakes are agglomerated by using a fruit concentrate and a vegetable concentrate, and the agglomerated flakes are subjected to a heat humidification treatment to dry the flakes so as to have a desired water content. The dried product can provide a fruit pulp or a vegetable pulp by reconstituting the dried product by using a cold- or hot-aqueous liquid. The external starch is preferably the starch of B-type (e.g. potato starch). The heat humidification treatment is preferably carried out at 65-95°C for 20 min to 12 hr.
