PROBLEM TO BE SOLVED: To provide a food modifier for improving the properties of food and beverage products manufactured by processing starch-containing raw material.SOLUTION: The food and beverage modifier for processing starch-containing raw material by using α-glucosidase. The α-glucosidase acts upon carbohydrates selected from the group consisting of α-type oligosaccharides and α-type polysaccharides so as to produce carbohydrates having an α-1,2 bond and carbohydrates having an α-1,3 bond.SELECTED DRAWING: None
