Abstract:

PURPOSE: To obtain crab arm meat having tastiness, sweetness, flavor and palate feel each entirely equal to those of the original raw meat, suitable as a food material for 'sashimi', 'arai' and 'shabu-shabu', by immersing a kind of crab in warm water followed by quenching to facilitate its crust removal.
CONSTITUTION: A kind of crab is immersed in warm water at 40-100°C) or so for 3-60 sec or so and then quenched in a chilling medium at 3 to 5°C followed by cracking the arm and drawing the arm meat which is then rapidly frozen, thus obtaining the objective beautiful crab arm meat freed from crust. This arm meat has the following characteristics: (1) having muscular membrane with muscle assembly preserved (2) the muscular membrane has been denatured, and (3) the muscle is entirely equal to that in the original raw state.
